Pi Kappa Cino opened its doors in downtown Haxtun on Monday, Sept. 25. Owners Patricia and Jonathan Prescott opened their fourth business venture with hopes of giving the Haxtun community a cozy place to indulge in a warm beverage or have a lunch date with a friend and their new Haxtun location does just that.
The first Pi Kappa Cino opened in Sterling's Broadway Plaza in late 2005 by then owners Corla and Kenny Enslow. Patricia was the first employee of the double-window drive through when she was 17 years old.
"I always told her (Corla) if she ever wanted to sell I wanted to buy the business," Patricia said.
Patricia met Jonathan in 2007 and the couple married two years later. Shortly after their marriage, the Enslow's approached the two about purchasing the coffee business. "Unfortunately, being newly-weds, we were unable to purchase it at that time," said Patricia.
But when she and Jonathan talked about their dreams, she knew she always wanted a coffee shop and he hoped to someday own a restaurant.
"Together we knew that our dreams were compatible. In 2013, in God's perfect timing, Corla reached out with another offer that worked for everyone. We took over the business on Dec. 1, 2013," she said.
Patricia said in 2022, she and Jonathan were approached and asked to operate a drive through coffee shop in Fleming. "Our first expansion was opened in August 2022," Patricia said.
A year later, the Prescotts had the opportunity to re-open a coffee shop in the old Carnegie Library in Sterling and in working with building owners Lori and Av Schott, Patricia said it was a perfect match.
The newest, Haxtun location, Patricia added, was a dream that began to take shape in April when conversations with building owners Jared and Jonetta Anderson took place.
"After months of planning and weeks of renovations, PKC Coffee in Haxtun opened on Sept. 25," she said.
According to Patricia, she and Jonathan were regulars to the Daily Grind, a former coffee shop in Haxtun, and the two were sad to see it close.
"Even after opening the location in Fleming, we would still go to the Daily Grind together to have a sandwich and enjoy a coffee. We recognized the need for another place to eat and get coffee," said Patricia.
The couples favorite part of owning coffee businesses, Patricia said, is the ability to meet new people and form relationships with regulars.
Pi Kappa Cino offers specialty cream cheese sandwiches along with a breakfast and lunch menu. Additionally, the coffee shop offers a wide variety of specialty drinks.
"Our drink menu has been perfected over all of our locations. We have a wide variety of sugar free flavors and low carb options," Patricia said. "Jonathan's parents are diabetic and we never wanted them to feel like they couldn't enjoy at least one of our monthly specials due to dietary restrictions."
Pi Kappa Cino is open at 202 South Colorado Avenue Monday through Friday from 6 a.m. to 4 p.m. and from 7 a.m. to Noon on Saturdays. To reach the establishment call (970) 774-2739.
Patricia said the goal of Pi Kappa Cino in Haxtun is to become a part of the community. To be a place for people to go to relax with a warm drink or to have lunch with a friend. To possibly have a place to host a book club or Bible study.
"We are so honored to be a part of Haxtun. The community has been so supportive of our business and it doesn't go unnoticed."
